Wheat Pilaf with Brussels Sprouts and Mushrooms
1 tbsp. butter (unsalted)
1 tbsp. olive oil
1/2 lb. sliced mushrooms (shiitake and oyster)
1/2 cup finely chopped red onion
1 cup bulgur (preferably coarse)
2 cups chicken broth
1/2 pounds Brussels sprouts
1/4 cup packed fresh flat-leafed parsley leaves
1 tsp fresh thyme
1/2 tsp salt
pepper and khmeli suneli to taste
Sauté onions, mushrooms and quartered Brussels sprouts in oil and butter. Stir in bulgur, salt and pepper and sauté for a minute or two. Add boiling chicken broth, fresh thyme and return to a boil. Cover and place in 350F oven for 20-25 min. Toss parsley, fluff the bulgur with a fork and check seasoning.
